Bleeding the clutch. What fluid to use?

Don't run it for much longer than that. As the water content increases, you won't feel any difference., but the corrosion will be occuring. If you run DOT4 fluid in the clutch, I recommend flushing it at least every year. If you run DOT3 fluid, every two years should be safe.
I dont like to keep any fluids in my car for long periods.

To clarify what I said, ATE will work fine. The water absorbtion will compromise the boiling point, but that will have no effect on the clutch as it does not get hot enough (no where NEAR hot enough) to make any different on the boiling point.
However, it does need to be changed over more often, it's more expensive than any DOT3 fluid, and works no better than the DOT3 fluid.
