If you can shift the car by rev matching and not using the clutch, that confirms disengagement issues. I would try another bleed if it has gotten better. But either way, your not getting full disengagement, either poor aftermarket disc, poor pedal adjustment or air in the line.

Why would it get better on its own. I can think of two possibilities.
The spring that fell out of disk has moved, and now its no longer jamming things up. If this is it, its probably going to move again with unpredictable results.
Air has worked its way out of the hydraulics.

Ladies and gentlemen, I present to you, the problem:

For those of you that can't see the images, a large portion of the friction material on my "All clutch systems" disk seems to have disintegrated off.
My throwout bearing also did not seem to be greased.
All in all, the dealer that installed this clutch screwed me over, but lesson learned and problem solved. I'll be reinstalling my transmission this afternoon.
P.S. For anyone wondering how difficult it is to remove your transmission in your driveway, while having a lift would give you more clearance and make the LAST part of the job easier, for the most part, doing it in your driveway is not that hard of a task. Fair warning, however, it does take some time. I spent 5 hours just removing the transmission. I'll probably spend another 2 hours replacing what needs to be replaced, and another 3-4 reinstalling everything.
Two days by yourself, possibly one day with a competent friend.

A Honda dealer put those parts into the car? There isn't some sort of warranty on their work?

I doubt a Honda dealer would install any aftermarket parts on a Honda they were prepping for sale.
It was likely just some dealer. In a hurry to get the car the hell off their lot. They probably also had no idea (and no real concern) that aftermarket clutches don't work in this application.
Oh well. I beleive OP is replacing with Honda components.

Got the thing running again this afternoon. Shifts like *b u t t e r*. It's so nice. Still grind a bit in first, but I think that's because I jacked up my synchro a bit while the clutch was going bad. Not a problem at all. I can work around it and I know for a fact now that it's not my clutch.
(If shift R -> 1st, no grinding. Not an issue.)
