I'm gonna mix 3 quarts of Mobil 1 syn 0w-20 with 3 quarts of 5w-30 oil. The result will be 2.5w-25
It will be sitting most of the winter and will NOT be raced at all. It will be changed well before 3 thousand as it will be stored thoughout the winter.
This will give me good startup protection when I do start it (it will be driven moderatly 2-3 times over the winter) and will be replaced by 5w-30 next spring.

I woud not use it. Mobil already formulates at the low end of all the vis ranges as it is. 0w20 is not recommended for this engine in the USA. I believe it is too thin for sustained high speed/high temperature use. Since Mobil1 also comes in 10w30 range, why would you not go to that obvious solution if you are going to stick with M1? I have several gallons of 5w40 Delvac1 for future track use, and I would use that if I lived in Germany and did a lot of sustained Autobahn blasts.
The point about Bonneville racers is really not applicable here. Yes, for a high speed record attempt, the lowest vis oil will yield the highest horsepower output. But is that vehicle then going to be driven on the street for 100k miles? Of course not - it will likely be retired or rebuilt.
Race cars often qualify on 20w oils - but when race day comes and they have to lap repeatedly rather than the 3 or 4 for qualifying, none of them uses a 20w.
I do not recall ever flatly endorsing Amsoil - in fact, I have noted a tendency of ATM to thicken over its service life lately, which is odd. I still think LE 8130 is the best all around 10w30 I have seen, and will be the one I use, if I ever get to 7500 miles. (1 year out, and I am still under 2k).
