The water temp sender is located at the very back of the engine next to the firewall. You will not get at this easily without lifting the engine. Additionally, the ECU needs the OEM sender signal. There would be no room to "T" another sender into this. You are better to find a different location. Here is where I put mine:

There is an OEM oil pressure sender tapped into the front of the engine. You could "T" into this for your temp sender, however, there isn't proper oil flow there to register a good oil temp reading, plus, you'd need to use a steel line to remotely mount the sender due to the weight of the sender possibly cracking the fitting. This remote mount would also make for a bad temperature read. You are best to install a Greddy oil filter adaptor and put the sender there. This, too, will not give a true oil temp reading as the oil filter mount has a water cooling jacket, but this is better than your other choice.

Are there any differences in oil pressure readings using the greddy sandwich adapter as opposed to tapping right off the stock oil sender?

Isn't the best spot to take the oil temp in the lower pan? I've always been told that it's the most accurate reading due to the volume and how it'll keep you from seeing wild fluctuations, hot or cold spots in the block/head, etc....
