When I did my clutch install a plastic piece broke off at the bottom of my shifter and kept me from going into first, might be your problem? Also about the stalling you how long ago did you install the clutch? Did you remove the o2 sensor? If you touched it, the grease from your hand might be on the sensor...causing the car not to run right...also happen to me until it burnt off.

Is it easy to get the car in gear (any gear) with the engine off?
The FW, OEM disk and PP are supposed to work ok as a set?
Its either your clutch hydraulics => trapped air, low level, ect => resulting in the clutch not fully disengaging.
Flush and properly bleed the system.
It may be too much play in the clutch pedal / master cylinder linkage but you really need to do some research to adjust it properly.
Or.. the clutch disk splines weren't cleaned and lightly greased with EP grease during clutch install making the disk "kinda stuck" on the primairy shaft, resulting in your problems.
With the engine running and not moving, e-brake off, select first.
If thats hard to do, is it also hard to do a second time right after the first time?
(so go to neutral and select first again, clutch still disengaged)
let us know what happens.

You may simply need a slight clutch adjustment. I have found that non-oem parts change clearances enough that an adjustment of the pedal mechanism is needed to get the engagement back into the proper place.

You've had nothing but problems since the install. Crappy job.
Lightweight flywheels do not cause your issues. That's a fact.
Question is, were the clutch hydraulics opened during the install? No reason to do that, or touch the clutch adj unless it was messed with.
