Im at about 500-600 miles of break-in so far and im wondering if this is enough time for me to be able to replace it. if not should i just hop on the freeway and cruise at 70 for 300 miles this weekend, or should speeds vary when breaking in gears.....i wanna drive the car hard again!!

The gears should be broken in enough now that you can let em rip as much as you want. So go ahead and drive it like you stole it.
However, I'd still wait til the 1000 mile mark to change the diff fluid, that way you also get some hard driving in.
