I have test driven a few, but never a new one. It does not seem to be a problem getting a test drive in a pre-owned car, but they tend to be a lot pickier in a new one.
One problem with the test drive: the S2000 does not make its power until the motor is wound up, but you shouldn't redline the car until the motor has broken in. So how much good would a test drive do if you had to limit yourself to 4-5k? When I was sedan shopping I got a test drive in a new Audi S4 with almost no miles on the odo. I will admit I drove it a "little hard" - I guess mainly because the dealer would not deal off of sticker - so I knew if I got one it would be someplace else. I felt bad about it, since someone else got a "new" car that had some hard first miles on it.
In an idea world, Honda would do a dealer demo program like they have for the GL1800 motorcycle. But as many have pointed out, they don't want Honda to make or sell a bunch of S2000s....
