If you don't believe the chart that is fine, bottom line is if you test it it will prove out.
Tire grip is more than pressure, in the highest level of competition pressure is far less important than how even the tire temperature is spread out across the tire, i.e. the use of optical thermometers. In many cases a lower tire WILL grip better, yes that is true. However there is more to chassis dynamics than the static pressure of a given tire, it is the relationship in grip between front and back that is key.

Yes of course that is true. Tire temps are taken across the width of the tread in three spots, left, center, right.

In the Skip Barber book "Going Faster" the author says the grip gets better with more pressure to a point then it falls off again. Like a bell curve. IMHO the top of the bell curve with MY car and the way I drive with the stock S02s is 32 psi all around just as recommended.

He recommends the following for ballancing the tires front to rear; You start with the cold pressures recommended by the tire manufacturer technicians, who invariably know better. When the car comes off the course you note the hot pressure of each tire and see how much each gained from cold. You try adjusting the cold pressure so that the pressure rise from cold to hot is the same on the front and rear tires of he side of he car doing most of he cornering work - the ouside pair in the majority of corners
