If you swapped the engine, then the handling would be gone...

This is so damn stupid. Any engine transplant would disrupt the balance of the car. So handling would be effected. Then you have to add in the amount of money it would take and all the drivetrain components you would have to replace. In the end you wouldn't even have an S2000. You might as well have just gone out and bought the faster car in the first place. If you do a turbo kit (or any forced induction) right, you can get over your "it's so fast" 320hp mark. So your dream makes little to no sense.

Do this instead...

Drive your S2000 to the nearest Chevy dealership in your area. Trade in your car for a Corvette.

Yep, and after you have your new Corvette come to Northern VA and we can have a little fun so you can say "I didn't know S2000's could be THAT fast!" at which point you can go back to the Chevy dealership and try to find a way to convince them to give you back your S2000...

Why buy a car and rip out the engine. Sounds like a waste of money to me. If you want to mod the crap out of a car, go buy some last gen Supra.
