There is one mod you could do that is completely free of charge. The technique mod.
I read somewhere that your sensitivity is greater if you pull at the wheel rather than push it. I think this is true.
Say you're turning left, pull with your left hand more, rather than pushing with your right, you can feel a lot more! Not saying you should use one hand! just more effort on the one nearest to where you are turning.

I agree with your "two hands on the wheel at all times" rule. Driving is dangerous. People don't realizes the consequences that can occur when they don't take it seriously.
Unless you're Han from FF5 and can pass, flash high beams, make out with hot gf, and recite inane lines of dialogue simultaneously. No need for rules. Mad skillz yo! (see video below for example)

I try to avoid the death grip, but the energy is usually transferred to my but which clenches solid, If I do it enough I start to get some gluteus maximus cramp... relaxing at the wheel is something that comes with confidence, so its a bit of a chicken/egg scenario.

OP if you disconnect the speedometer wire that goes to the EPS unit so it only sees the RPM and not MPH then it will work at half of normal, the EPS light will still be on but it thinks the car is sitting still so it only works a little. The difference is like when you make a turn you can do it with one hand but not as easy and the wheel does not return to center like it would with EPS working.
