The real issue with oil sitting a long time is if the oil is old. It will have picked up a lot of caustic byproducts of combustion, and left sitting, will eat away at bearing surfaces, etc.
But your oil only had 700 miles, so its very clean.
The issue is letting bad oil sit, not good oil going bad from sitting.

I'm no expert, but after 15 years of having an S2000 garage-queen, I change the oil after 3,000 miles. I may go for a year and half with out changing it. The engine acts like it did the day I drove it off the showroom floor.

I drive ~6000 miles a year.
I change the oil,before storing the car,01-November;May 01,take tha car out of storage,and drive it till next November;been doing that for 15 years,no problem.
