i got my seats and bunch of other stuff stolen.. my Ins company came to the shop where my car was.. took some pics and gave me a option. Either i claim only my seats and some small parts or total the car out due to the fact i have a 01. So i just claimed the seats. They sent me a check for 7k and i found AP2 seats for 800 in great condition. saved the rest for mods.

Take it to a dealer or dealer recommended upholstery shop, tell the insurance adjuster to come look at the car and get an estimate for the damages, then tell them you're going to have the work done.
They should be able to cut you a check if you've done all this but if not then try and work it out with the shop.

I just had my s broke into, slashed top, driver and trunk lock were screwdrivered, driver top seat was ripped and door leather pannel was ripped. I asked for a check and would decided who does repairs. They paid me and I had honda do the locks, I installed a robbins top myself, purchased the seat leather slip and door panel from majestic and saved quite a bit of money.
if they tell you to take it to a shop realize that the shop gets the check and can sometimes try some shady stuff. just tell them that the S is not an average car and that you will decide who is capable of doing what. Paying a shop to install a top they never have or haven't done in years is a no-go.
My insurance rep gave me the exact value of Honda OEM parts for everything, and labor values. Make sure to tell them upfront what labor will be for the top, I got quoted 900-1000 dolars just for laybor at 70/hr or so, sometimes they will be off on labor, do a little research and save money.

They may opt for aftermarket on the top or charge a betterment if your top is worn. In most states they are allowed to look for used seats also. If they find some in similar condition to yours or better they can price the used seats. If you have a lienholder they have a duty to protect the lienholder. In that case they will need to make sure the vehicle is repaired and it gets sticky trying to opt for cheaper items and spend elsewhere.
