Stock stereo volume control problems

About a month ago, I installed new Polk speakers and an aftermarket amp. I kept the stock head unit until I can get an MP3 player that I trust and won't break the bank.
Now that I have everything installed, the sound is superb, but one thing I noticed is that the volume controls don't go up or down smoothly. I have the gain on the amp set at about half way--just high enough so when I turn it up with the top down at 70 mph, the sound doesn't get distorted because the head unit is pushing so hard. But at that level, every volume adjustment I make, no matter how minute, makes the volume jump up or down. Anyone have suggestions (besides buying a new head unit for now) that might remedy this?

Most line level converters have an adjustment for the output (the little box between your amp and the headunit). I would suggest turning the levels on that converter almost all the way down. Do you have a hissing noise when the volume is all the way down?

I used the speaker output from the stock head unit into the high level inputs on my Alpine Amp. Also using Polk Seperates and my system works quite well. Sure when you feed high level into an amp you will have much larger steps when you turn up the volume. The only way to solve this is to buy a new head unit...contact Pinky on this board. He can set up up with a great system and still use your dash mounted controls.

Just a thought...
Some amps have a switch for you to throw to tell it which level input you are using.
Check if it has it, and then if it's in the right position.
