For the hood you will probably get like 20% weight saving compared the stock aluminum hood, not very sure how much of weight savings you will get from a cf mirror, probably just a little, but nonetheless they are aerodynamic with a low drag coefficient...

Here's the weight saving for the Amuse S2000
Total weight loss - 226.4
Ti zorst - 45.1
CF hood - 11.5
CF trunk lid - 11.9
Seat - 37.7
Wheels and tyres - 39.3
Steering - 1.0
Piping deletion - 10
Passenger SRS - 7.8
Pomech Battery - 9.2
Spare tyre and mats - 44.8
Others - 8.1
gives you a good indication of where to look for weight savings but as mentioned above, you have to go dry carbon if you're serious.
