also, steve c, you think the ITR out handles the S2000? or is it just the S2000, needs more rubber? because the ITR is high on my list also...
Yes -- in certain ways the ITR does handle better. In a dynamic matter, (slaloms at an autocross for instance) the ITR is more balanced -- in fact most magazines have a faster slalom time for the ITR.
However in almost all cases the limits of the ITR are less than those of the s2000 -- BUT (and a big but) they are much more approachable (easier to find and play with).
For canyon carving I would take the S2000 over the ITR just because it drives the proper set of wheels

We need an S2000 Type-R, that's just all there is to it.
And HEY!! What's wrong with Miatas? Okay so they're not as big and bad as the new kings of the roadster hill, but being atop the 10 Best lists every year since inception has to prove something.

I'd much rather have a Miata for a warm summer drive through some mountain twisties than a front drive hardtop.
Not neccessarily faster, just way more fun.

I own both a '98 type-r, and a 2001 S2000. I love BOTH cars, but they are very different.
I think scott c's comments are pretty accurate, although I don't know for a fact about the comment about the type-r being faster into an apex (haven't done back to back comparisons). But his other comments are correct. The type-r is much easier to drive near its limits, and is very well balanced. This isn't BAD for the s2000, just very different.
But the s2000 is tons 'o fun, being rwd, 6-speed, 9K, roadster, less body-roll, and lot's o HP. Just FYI - I've only driven my type-r 1 time (while the s2000 was in the shop for transmission stuff) this summer - in fact it still has snow tires on from LAST WINTER!
That shows how much I love the s2000.
