Honestly, Grand Turismo (any one of the 3) for the Playstation comes with a decent "crash" course on hitting an apex in different situations, including which I don't think anyone mentioned is when to get on and off the throttle and how hard to get on or off it, you can do a ton of steering in the s2k with your right foot. Set up a 8 cone slalom (or join SCCA and auto-x, will be the most fun you will ever have) and play with turning the car with the gas, you wont be disappointed

Skip barber demonstrates this question quite effectively using a skid pad. Drive a certain radius around a skidpad. When you are at the maximum speed you can just maintain that radius. Increase the speed and the radius increases as the car pushes (understeers) into a larger arc. The faster and faster you go with the car on the edge of adheasion the larger the radius will get or in other words the larger the radius the faster the speed through the turn can be.

THEREFORE the fastest way through a turn is the line with the largest radius. On a typical turn this will be outside/apex/outside as stated earlier.

Those that are interested should check out the video/book series "Going Faster" put out by the Skip Barber school.

Late Apex when the corner is followed by a straight, to ensure maximum exit speed and maximum straightaway speed.

Early(ier) Apex coming off a long straight into a multiple set of corners where corner exit speed is less important.
