I'd be interested in the same info... the 'three bars' water temp doesn't satisfy my thrist for knowledge of the temperature of vital fluids in my engine! Anyone got any advice here?

I haven't done it, but accessory guages are often mounted on the A-pillar. You'll need a sender unit screwed into the engine (usually replaces the idiot light switch, which then screws into the sender).
BTW, the 3 bars are water temperature, and I agree, it doesn't give the proper information about whether the engine is warmed up or not.
I'm also interested in hearing about anyone that has performed this addition.

Spoon has Oil temp senders in two lenghts that replace the oil drain bolt.
I think Amuse also has a gauge pod that fits in the driver side pillar.
If you want to save space SPA has some nice dual digital gauges with warning and memory. They are pricey but as I mention, very nice. I think Pegasus sell them. You could buy a water/oil temp or oil pres/oil temp combo.

You guys might want to think about a water temp. gauge and an oil pressure gauge instead of an oil temp gauge.
Oil pressure is vital, as is coolant temp. If you have too high oil temp, then chances are that something is terribly wrong.
Oil pressure and coolant temp. are for monitoring.

Considering that the 15W-50 Mobil 1 that I put in my car has flow characteristics down to -39F, coolant temp is more important. If your thermostat is supposed to kick in at 160, and you are running 200, you'll never know, and that'll kill your motor before your engine oil is in the "too unsafe" zone.
Once the car warms up, it is more important to monitor the coolant temperature, because the coolant will register hot way before the oil does. And the oil pressure? Well, the temperature can be fine and you can have only 1 quart in the whole system, yet your pressure would be way down. So the oil temperature would not show a problem, but the pressure gauge would.
If you look at all of the racers (in all kinds of cars) the vital gauges are the coolant temp and oil pressure. Everything else is important, just not as.
