OEM Hardtop & Insurance

OEM Hardtop & Insurance
This topic has been covered somewhat in other threads, but nothing was terribly specific.
I'm about to purchase a OEM hardtop, Progressive is my insurance carrier. I called them already and they said the top would fall under "custom" parts. Their definition of custom parts is "parts installed by anyone other than the original manufacturer". This would include OEM hardtops that were not purchased with the car originally. No problem there, as they cover the first $1k with Full coverage, anything above that you have to add.
They said pictures and a receipt/bill of sale would be sufficient for a coverage change. My question is, how do they add the top to the coverage? Do they base it off the original hardtop kit part #? Would that be required on the bill of sale?
I know you can still buy the hardtop in pieces and put it together, this is what insurance companies do now correct? If you add coverage for the top, will it only cover the stated dollar amount you purchased it for? Or would it cover the top replacement even if it was more than the insured dollar amount? So if you have $2000 extra coverage for custom parts, but the top costs $7000 to replace in pieces, would insurance replace it or would they stop @ $2k?

It would stop at $2,000 if the coverage for custom parts maxes out at 2,0000. Most likely if your hardtop was say stolen, they would likely payout up to $2,000 if you replaced the hardtop and had proof of purchase. If you choose not to replace it, they would likely give you the amount of money you paid for it.

Added it as the amount I paid. That makes the most sense clearly.
I saw in another post about the same thing that someones hardtop was replaced in pieces when it was stolen. The reason I asked the original question was because of that post.

I believe the other thing to avoid is to add it for $10k for example, then assume if it got stolen they would cut you a check for $10k. That's not how it works
