If you finance, your lien holder generally has a minimum coverage requirement. So in addition to the liability coverage required by law (state), you generally need collision and comprehensive coverage. Your lien holder has a ceiling on the deductible you can opt for. AHFC is $1,000 from what I've been told. If you drop coverage, the lien holder has the right to recall your loan.
As for the second question, the dealer can usually provide you with temp tags as long as you provide proof of insurance. Some insurance companies offer a window of coverage for new vehicle purchases (you have to tell them beforehand). Call your agent.

I also have an insurance question....
I plan on possibly buying a S2k within a couple of weeks, (mid-march), from a dealership in NYC. However, I'm located in Boston. Now I would like to make this a one-shot deal if possible. I would like to drive the car home the same day if all goes well. I plan on financing and would bring a blank check up to the dealership to initiate the loan.
I'm not sure if I would have to go back-and-forth to Boston, just to go through the whole car registration & insurance process before driving the car back or is there an option where the dealer could issue temp-plates? If so, I'm not sure how temporary dealer issued plates work in correlation to insurance.
Any help is appreciated. I'm so use to private party transactions, this would actually by my first dealer purchase.

The only way to pay and drive it home is to buy it private party and use their old plates or somehow convince the dealer to let you use their tags.
Reasoning is this. You can not register a car in MA without having valid insurance first. Can not get insurance till you have proof of ownership. It just ain't going to happen in 1 day.

Unless you mean that you've already made a deal and have the car parked somewhere where you can get away without license plates.

Honestly..i would not recomend anything but full 100% coverage on it..especially on this car. Because its seats and steering wheel have a way of finding themselves in civics and integras..
