How much would an 02 s2000 with 500 original miles on it go for?

Doesn't help that car prices in Aus are higher to begin with. Base model E90 BMW 3 series run about AU$60k

I think there really are some valid concerns here about the mileage just being too low. If there are records of regular maintenance and the owner can contest to regular startups it may be a gem. Inspect everything rubber and consider how it was stored and where it was stored. An Arizona car will take a lot of abuse from sitting inside a garage for 10 years doing nothing. Should the car really be a gem I can easily see 20-25K retail, if not just consider the amount of $ its going to take to make the car right. I would also consider that the dealership may sit on this car for awhile if they want top dollar. Its surely a car that requires a unique buyer...

I paid $17K for my '02 Black on Black w/ 23,000mi in January of this year, just to give you an idea.
