I dont see how that could blow your engine.
If the seal just blew and oil spewed out and you stopped all should be fine.

They only left the gasket on there, they replaced the filter itself.
With regards to the engine damage, I can't imagine the engine being harmed too much, if even at all, based on the op's immediate reactions to the hissing noise. It's not like the engine oil just evaporates off the internals instantly. Now if he left the engine running while inspecting I could see something happening.

It sounds like the honda dealer is trying to pad the bill, since they know you're gonna dish out for a new motor whether jiffy lube eats it or not. I'd clean everything off, drain what's left, put on a new filter, fill up the oil and add some Lucas just for good measure, and see how she acts. Pick up a magnetic drain plug while you're at it so you can see for yourself how bad it is. Drive on it for a couple miles, then drain the stuff and look at the drain plug. Unless it's got metal powder or shavings on it, I'd tell honda to screw themselves, but keep the invoice and sue jiffy anyway. Get a nice spoon balanced and blueprinted block for your troubles

Not possible, VTEC won't engage unless you have adaquent oil preasure. No matter how quick you are at turning off the engine, at highway speed RPM's that engine has gone around at least 300 times with no oil preasure.

I was told $9500 by a local Honda dealer for a new engine, so I took her back to my Honda dealer in my home town. It turns out that the new engine is in fact $7K, but they wanted $2500 locally for the install (I am paying $1700). So after sales tax you are looking at a bit over 10 grand.
But in this case, since it is very obvious who's fault this is, I would get a brand new motor out of the douche bags that run Jiffy Lube.
