Try an alignment. Rears can be set to 2.0 or more negative camber with as much as 1/4" toe in. That should help with a loose rear end. If it's still loose go to R compounds.

For the second question:
At the limits of traction... upsetting the balance of the car will start it sliding. Shifting will do that.
Remember that coeff of static friction is higher than for an object in motion....
Imagine walking up a icy hill with dress shoes... if you start to slip, you ain't stopping. Your only hope is to not upset traction as you gingerly place your footing... then someone slaps you on the back.
That's what you're doing when you do ANYTHING to upset the balance in a maximum traction corner... that means lifting off the throttle, jabbing the breaks, the lurch as engine rpms match in a gear change....
I suppose if you did a perrrrrrfect rev match with easy clutching you could do it without upsetting the balance... but why not downshift before entering the corner like a skilled driver?

I read this whole thread and learned a lot about fish poop, but I did not see anything that told us exactly what tires (f and r) are on the car and what their condition is. IMO, if the rear S-02s have over 10,000 miles on them may still have tread, but have lost a lot of their "stick" due to the number of heat cycles they've been through.
