I'm in 5th gear around that mph range. By 40 mph, I sit in 6th gear.
Same here.

You are actually getting worse fuel economy lugging the motor at 2,500 rpms than you are with light throttle at 3,500 rpms.
This is categorically false.

Engines are most efficient at the lowest possible RPM and the widest possible throttle opening.

As for me, 6th gear by 35 MPH.

Depends on how spirited I'm driving but 95% of the time I'd be in 4th at the speed.

When I hit the limit regardless if it's 60km/h or 100km/h, i cruise on 6th.. Isn't this normal?

4th if I'm on a flat surface, 3rd if there is an incline. I'll only shift into 5th if the RPM's reach 3400-3500 in 4th, otherwise I'll stay in fourth or lower depending on the incline.

My average speed on the streets is around 40mph so 4th gear is where I end up most of the time while cruising.
