just wondering on aftermarket exhausts can you change the cat or you get a whole new exhaust?

Aftermarket exhausts are called "cat-back" exhausts. You don't get a new cat.

If you're looking at cat-back exhausts, those bolt up to the backside of the cat, so you don't need to replace the cat.
