will the 00-03 model years door panels fit the 04-05s without any modifications?

Don't do it. The AP2 panels are faster.

 

Good lord, why? The AP1 folks love hating on the AP2, but I haven't met anyone who prefers the AP1 door panels!

IMO, the AP1 panels have a lot less elbow room and make the interior noticably more cramped. What's your reason for wanting the switch?

Anyway, to answer your question, I believe you can do it. Plenty of people swap out the AP1 panels for AP2s without mods, so it stands to reason you can go the other way, too.
