Due to the cost (great bang for the buck), I am going to be with the norm here:
Tires: 255 square Hankook RS3
Wheels: 949 Racing 6ULR 17x9 +63
I've tried the RE11's and the R1R's, and we just like the R-S3's better. But, I must admit that the longitudinal grip on the R-S3's doesn't seem to be as good as the R1R's.

Tires are Hankook 255/40-17

I'm seriously considering trying TR3 17"X9" +48 on the rear to gain extra rear grip by widening the rear track.

I prefer the feel of the Dunlops every time. My driving style is very precise and I just don't like sliding around. They wear more evenly than the Hankooks and handle water better, but are not as forgiving with slip angles or temperatures.
With that said, I run two setups:
Temperatures below 80*F
Tires: 255 Dunlop Z1* @35psi
Wheels: 949 Racing 6ULR 17x9 +63
Temperatures above 80*F
Tires: 255 Hankook RS3 @35psi
Wheels: 949 Racing 6ULR 17x9 +63

To answer the original post, next year I'm going to be joining the camp of:
Local Events (all) and National Events (sunny and warm or cloudy and hot): 255 Hankooks
National Events, rainy or cold and cloudy: 245 or 255 dunlops, haven't decided yet, leaning towards 245
Rallycross: Hoosier A6 (....ok maybe not)
