You really won't get down below 2450 ish for an STR car. SSM doesn't get any lighter than STR (due to power adders and bigger wheel / tire combinations).
The S2000 is not really the lightest chassis to work with. An MX5 or Elise is really the way to start with if you're going narrow / light.

I just took the wipers out this week when I was finishing putting the car back together from some bolt ons... hmmm, sounds like I need to do some reading for next years class choices before I go any farther with anything

You also will not get by with 2-3 bars of gas if you grip up. On sticky tires, it's 1/2 tank or more to prevent left handed fuel starve.
You can also destroy an engine lean detonating from fuel starve.
