I can also park the car, come back 10 minutes later, and temps have gone up as the warmer oil settles back into the pan. I'm pretty confident in the temp readings on track, but I think around town I would see higher oil temps reading from a sandwich plate.
Sure, temps may be slightly lower at the bottom of the pan, but not 10+ degrees imo. When cruising on the highway, you're spinning 3k+ rpm, oil pressure will be ~80psi, and there's plenty of oil moving throughout the system. The oil pickup is also positioned towards the bottom of the pan, it's not like it's just skimming hot oil from the top. Perhaps the real engineers can support or refute this, but the oil passages don't constrict or enlarge, and thus 80psi at 3k rpms is flowing a similar amount of oil as 7k rpms. The big difference is LOAD. Putzing around you're creating 80hp, which means there's much less heat being put into the oil (more power = more heat, simple). When on track, you're creating 240+hp.

Temps rise when sitting still, stopped, or the car off, because you have an incredibly large heatsink (the engine), and the oil absorbs some of that heat (my oem fan switch temp is set to 195F). So, if you stop briefly, it's no surprise temps rise a little.

To the crank. And when putzing on the highway it's probably more like 40 or 50hp, maybe less?
