Curious, how much does this affect the overall feel of the car in terms of the heavier engine in the front + less bracing ?

Everything that you've hacked out is structural. This car in a collision would fold in half even at much lower speeds.
The chassis is going to twist excessive amounts under cornering and dynamic loads making it unsafe.
How can nobody else see this?
Everything highlighted should never be removed, its the backbone of the car. You've essentially destroyed the frame. You can say its common to do with this type of swap, but it doesnt mean its the RIGHT thing to do. But you should know this being a "Class A Mechanic"

Weight, the difference in weight is minimal, the s2000 drivetrain with a complete turbo set up, is within pounds of the v8 drive train. and its mounted in almost the exact same position.
there was even 1 guy that got the same weight distribution as stock and weighing in just less then stock. lets remember I deleted A/C completely minus the evap, and pretty much all other non essential parts: cruise, air pump set up, cross member, battery in trunk, etc...

Looking good! And the motor plates are solid for this. The ls1 is an aluminum block so the weight gain in minimal. Right at 100 lbs as according to what I remember seeing the weight difference. Also the ls1 is a well balanced motor so even with solid motor mounts you won't feel the shaking of the motor in the car. I know in my GTO when under the hood the motor vibrates next to nothing! Keeping it going bro!

Oh and the best part is with about 2800 bucks cheaper then a used turbo or super charger kit. You can have easily over 500 on this motor and drive the hell out of it. The LS2 in my goat has right at 480and I drive it 500 miles like its nothing!

Be easily attainable with that goal. Most motors dyno around the 325 whp range since they always have custom exhaust/ mid pipes. Once they get the header section down you will be able to do this swap and throw a cam in and be where you want!
