I am using a selfmade 3" to dual 2,5" exhaust with "straight through" mufflers.
So its basically a 3" pipe that devides into 2x2,5". It is surprisingly silent together with a turbo and flows very good. I would never ever change this for a 3" single loud exhaust.

Picture of my exhaust.

Looks similar to what I got.... Except I don't have that inline muffler.... Will it make a big difference in loudness?

I honestly don't know, but my exhaust definitely came out more silent than i expected. I believe it would still be completely OK without the 3" short muffler.

I switched from a single straight through to a single 3" chamber flow master muffler cause mine was to loud but I lost 10 whp on the dyno.

10-20 WHP is a little more forgiving @ +500

It is, but a dual clearly looks better aswell imo, since the rear of the car is built to accomodate it.

This is the exhaust I bought.

That exhaust should work great and you definitely shouldnt see any losses in power with it. See how well the transition is from the 3" to the two 3" pipes? Thats the way it should be for the best flow. Thats pretty much how my UR exhaust is except mine goes into two 2.5" pipes but it doesnt really matter. Two 2.5" pipes will still flow as if it were a single 4" or 5" pipe.

I doubt you will lose a lot...you won't even notice it. I would go to a single for the loudness issue.
