I wanted to get a high octane 10psi map tuned for those special days.
Will I be just fine with the stock MAP sensor?
If not, do I need to retune my 8psi map as well after changing out the MAP sensor to a 3 bar?

If you change the make/range of your MAP sensor you will need to recalibrate everything that is dependant on load as the granularity of your load points is going to change. There are a number of ways to arrive at a base tune from your previous tune, but ultimately I would suggest at least some dyno time.
