I'm about ready to buy a huge hard drive and start ripping all my CDs to AIFFs and be done with it. Will that let me then burn to an Audio CD or an mp3 CD straight from iTunes? I would assume so, but I don't have anything to test with at work.

I am just like to hell with it. I rip everything to mp3, and then if I need to burn an Audio cd for my friends car or something ill just do that. For the rest almost any appliance that I own can play mp3's.
Ps: Not the dishwasher

For me, it's a bit different.
I've got like 80 gigs of AAC's that I play off my home system. I don't use mp3 discs in my car, i'll just use a hard wired ipod. It is my belief that Mp3s are an outdated technology (see audio cassettes) And I don't like how many Mp3s sound. Ripped at a high bitrate AAC's sound good to even the best ears, plus it's too late for me to go back.
So in car, 4 me, audio cds until the Ai net ipod controller.
