Less than optimal sub/amp configuration - will I be ok?

Well, I've posted a number of question lately regarding my efforts to upgrade my system. Thanks to all that have helped.
One more item has come up though...
I chose the Soundstream VGA500.4 to power my fronts and my sub. I'm planning on running the fronts off the front channels (obviously) and the plan was to run the sub bridged off the other two channels. I was planning on going with one 8" in a wlaurent box.
HOWEVER - I found a deal on a custom enclosure with a 12" sub included. I think the custom box alone is a good deal, so the included sub is just gravy. That being said, I'd still like to use it though... but it's an Infinity Reference 4 Ohm DVC. Bummer. My amp isn't stable into 2 ohms bridged (mono).
So, my options are these:
1) Run the amp/sub 4 Ohms stereo (each voice coil to one channel on the amp)
2) Run the amp/sub 8 Ohms bridged mono (voice coils in series, across the amp bridged)
3) Do something weird and run 2 Ohms on one channel of the amp (voice coils in parallel on one channel of the amp, not use the 4th channel - most bass is mono in the source material for the most part, right?)
4) Nix on the sub and get a 12" 4 Ohm SVC that I can run bridged (mono)
Can someone describe the power and SQ that I could expect from these options?

Somebody MUST have some advice for me!
I think that option #1 may be my best short term plan, but I don't know exactly how to determine the effective power that I'll be getting. The amp produces 125 Watts per channel into 4 Ohms, so I'll be feeding it a total of 250 Watts... but seperately into the two coils. How does that work out?

Aaargh! Somebody swooped in at the last minute and scooped the custom box and sub out from under me on eBay!
Oh well. At least now I get to use the sub I want...
