Your only problem with I-5 is the Siskou Pass just north of the California border. I'd check conditions there a day or two in advance. The rest of the drive is a cakewalk. San Fran to Seattle takes about 14 hours at the speed limit.
101 is slow and winding. It would easily add 5-6 hours to a 14 hour drive. You'll take 101 up the Oregon coast to Portland and then hop on I-5. San Fran to Seattle in 20 hours.
Once you commit to either path, stay on it until you reach Portland. This family tried the reverse of your drive and attempted to cross from I-5 to 101 mid-point thru Oregon.

Both useless at the sligtest fall of snow you'll be stuck even with the Evo!
Snow traction is more about the tire than the size. Both the tires you have to choose from will be hard as a rock, and have next to no spaces to pick up snow.
I would strongly recommend a front drive, underpowered economy car for your road trip.

OK looks like everything is clear and no snow! I'll be heading up soon. If anyone needs anything from SF let me know and let's meet near HWY 5...
