Default hard top adjustment

how do I adjust factory hardtop fitment? tops a little too far forward and the latches don't grip tightly, I'm having windnoise and rattling latches.

Loosen the rear brackets under the trim garnish and move the brackets so they sit further back in the rear catchers.

Loosened the rear brackets on the car and was not able to really move them much at all.

Yes, the bracket on the hardtop. The ones on the car won't move much at all, as you've found out.
