Quick question: i don't have to take it to one of there shops if i don't want to right? they would then pay for the damages and cut me a check? i'm not too sure about the whole process. let me know guys. Thanks

You choose the repair shop on your own.
You also can have the appraiser go to your house to assess the damage,

That's what happened to me with both my accident and theft. The adjuster came to my house and the check came in my name.

no. tell them to cut you the check. tell them your undecided when and to whom you are going to take the car to to get fixed.
dont let them sucker you into taking it to one of their shops
