I have used them both for work it's just a question of availability.

You would be surprised . Some come for oil changes and brakes ... Right now I stopped taking appointments the shop is that full of out of state cars .

So, fridge, many people refer to car parts in a general way, looking for a general answer. The CV can really only refer to a small number of jobs on any vehicle and most people use that term to describe the whole axle. While it is a little more labor intensive to change just the boot, instead of the entire assembly, most people remove the axle to do that job as well.
On a Chinook helicopter we refer to a specific actuator as an LCT (Longitudinal Cyclic Trim), an adjective. There are many actuators on a helicopter like there is more than one drive shaft (axle) on an S2000. Using the adjective as the noun simplifies the expression as we are all pretty informed about the workings of the machine.
Be careful of the model you make of the world, it may just be that way.
