a bit late but i'll chime in anyway. I lived in Japan for some years and the best overall Japanese food IMHO is Ichiza in Chinatown on Spring Mt. (It's above Tea Planet) The wait staff and cooks are all japanese and the cuisine is by far the most authentic I've had this side of the Pacific. It hasn't been tainted with this fusion cuisine shit. They even scream "SUMIMASEN!!!!" at the top of their lungs when you walk in. As far as "good" sushi goes it depends on what kind of fish they use; fresh caught or farm raised. I wouldn't say one tastes better than the other. I think fresh caught tastes better but to each his own. I would definitely ask your server. You can always tell the crappy sushi joints because they thaw frozen fish before preparing the sushi or sashimi. It loses alot of color, texture, firmness and most of all TASTE in the meat.

maybe i'll see some of you pop in for a bite to eat. KONPAI!

dude i've seen this place. always wanted to try this out but the place is always packed.

You sure they say sumimasen... thats excuse me, sorry/apologetic, in most instances.

Id guess they say..irasshaimase. which is welcome/please shop here. Thats what they say at the Mon by my house.
To anyone who doesnt nihongo hanashimasu (speak japanese) say..

ee lahshyee mahseh.. kinda fast one word, and your on the right track.

i'd call ahead for reservations or just go off peak hours. oh and Dave I believe "Sumimasen" used in the context "excuse me". They're immediately acknowledging your presence and want to accommodate you.
