You should not switch before approximately 7500 miles. You may find that you didn't burn any dino oil and after switching to synthetic you do. This is nothing to freak out about. Something about the gunk in dino oil that has to be thicker to provide the same amount of protection as the syn. Check out some of Road Rage's posts in UTH. He was out of Richmond, but seems to have fallen of the s2ki.com map. Dunno.
Diff fluid should be changed PRIOR to the manual's 30k miles recommendation. Some suggest as early as 3-7k miles.

In regards to the engine oil, your advice and pointy's match what I'd seen in the UTH forums when I researched it 6 months ago. They said basically that the only problems when switching to synthetic are when you do so after you've been using dino oil for a long period of time (tens of thousands of miles) or if you switch before your break-in oil period is complete (~7,500 miles).
Now I just need to figure out which synthetic I want to use if I do go that route. Anyone have strong arguements/opinions on which ones to use and which to avoid?

These are what I use. That does not make them the only choices.
Brake fluid: Ate Super Blue/Gold(alternate colors to ensure complete flush)
Clutch fluid: See Brake Fluid
Brake pads: OEM(street); Panther Plus(track)
Rotors: SP Performance Diamond Slotted(street); OEM(track)
Oil: Mobil1 Synthetic 10W30(because it is readily available)
Oil Filter: OEM
Diff fluid: LE-607
Trans fluid: GM Synchromesh Friction Modified

Skip, so far our fluid choices match up identically. I haven't done the brake flush yet, but other than that, we're on the same path so far. heh. And yeah, I've spent way too much time in the UTH forum trying to figure this stuff out.

I used to use Amsoil. Good stuff, but a pain if you forget to have it on hand. I also used Royal Purple for a couple of changes. I think you can now get that stuff at Pep Boys(so I heard).
