BTW...that vid is EXACTLY the kind of driving I had envisioned that you wanted to do.
No, the s2k does not progressively push the tail out and it is NOT very safe. It will bite the hell out of someone who does not respect it. The pic below is what happened to a driver who had his car just a few weeks who was trying to drive like in the vid you show on a similar twisty road.
In fact the s2k is frequently thought of as having vicious snap oversteer nearly as bad as the Porsche 911 turbo of a decade ago...a car so oversteer happy that some Porsche dealers required potential owners to go through a driver's course to learn how to drive the 911 before they would sell one.
I've had my s2k for 7yrs and have been autoxing for 23yrs...and I would NEVER attempt to drive my car like in the above vid on the street. I have accidently gotten my car sidways on the street a few times...and once ended by ripping the nose of my car off.
We aren't trying to give you an un-warm welcome...you wanted to know what car would be best for the kind of fun you want to have on the street. As owners, we want you to be happy with your choice and not put yourself or others at risk. As owners, from our experience, we are trying to let you know that the s2k is probably not the best car for you.

Ap1s are extremely tail-happy and the rear-end can come around in a split second and bite the driver in the @ss. Like I said before, don't let others be your deciding factor. Go and test drive both and let us know how you feel.
