Well the latest update guys I came across a wrecked 2000 s2k with 54,000 original miles and scored a ton of parts fairly cheap. A friend and I tore into this thing at about 8 and finished around 1, needless to say it was a bitch. Some of the main parts I bought:
Driver/Passenger complete door
Trunk
Convertible top complete
Tail lights
Complete Interior (down to the carpet)
Invidia Exhaust
Buddy Club Coilovers
Megan Racing Control Arms
Enkei RPF1s with tires
Along with various other parts. I plan to buy the motor/tranny which are not damaged but funds are tight at the moment. Got some free time this weekend and started tearing into mine. A few pics of the car after we tore it down.

Love what you are doing, looks like a lot of work, but in time you will have a nice and fully running car for a lot less money! Also like that you are putting back another S2000 on the road that could otherwise have ended up scrapped.

Thanks man. That is my goal, to build a good looking and good running s2k cheap. It has been exhausting but on the positive side, I am learning a ton about the car and am enjoying the process.
