I guess that might be hard to find on the mainland, except maybe in Las Vegas.
I'm not sure about what you need, since I've never made it myself, but I'm sure you would require some ahi, limu, Hawaiian salt, sesame oil, round onion, green onion and shoyu. I also like to have a little chili pepper thrown in for a little kick. I'm sure someone else here would know more. Rick, Colin, Mike?
Do you have local ties? If you're from here, you must also miss musubi

Poke, yum yum! Here's a recipe from Emeril Lagasse and Sam Choy:
Ingredients
1 and 1/4 pound fresh ahi, 1/4 cubed
1/4 cup yellow onion, minced
1/4 cup green onion, sliced
3 tbsp. limu kohu, chopped
1 tbsp. Inamona -- the ground innards from roasted kukui nuts -- is a specialized Hawaiian ingredient for that specialized Hawaiian dish, poke.
2 tsp. sesame oil
Directions
Combine all ingredients. Mix well and chill.
Another one:
Ingredients
2 pounds fresh tuna steaks, cubed
1 cup soy sauce
3/4 cup chopped green onions
2 tablespoons sesame oil
1 tablespoon toasted sesame seeds
1 tablespoon crushed red pepper (optional)
2 tablespoons finely chopped macadamia nuts
Directions
1 In a medium size non-reactive bowl, combine Ahi, soy sauce, green onions, sesame oil, sesame seeds, chili pepper, and macadamia nuts; mix well. Refrigerate at least 2 hours before serving.
Another:
Ingredients
Ahi
Shoyu
Garlic
Onion
Green Onion (scallions)
Sesame Oil
Ogo (limu) and Inamona (kukui nut)
Recipe
Just take these ingredients, mix them up and eat!
