From what I understand a single will give you a few extra ponies. I myself think that the car looks unbalanced with a single only. Search Under the Hood and S2000 Talk... there are many topics posted about this.

If you're fabricating your own exhaust, there's nothing to stop you adding a dummy pipe on the other side to balance the look AND enjoy the power (& weight) advantage of a single
I've seen this done poorly, though. The "psuedo" tip needs to extend under the car more than a few inches to fool me.
Don't forget to fill the bumper hole if you go with the single, only. That solves some of the unbalanced look.
