Need advice on amps...

The amp that I originally ordered is still on backorder for the next 2 months. So I'm looking around for something different and maybe better.
Here's my setup:
Pioneer 9400MP Head Unit
Infinity Perfect 6.1 Component Speakers (100 Watts RMS/400 Watts Peak Power)
Infinity Perfect 12.1 Subwoofer (350 Watts RMS/1400 Watts Peak Power)
Here are the two amps I'm looking at...
Alpine MRV-F340 Multi-Channel for the Fronts (130 Watts RMS x 2 in bridged mode at 4 ohms)
Alpine MRD-M500 Mono for the Sub (250 watts RMS x 1 at 4 ohms)
My questions are these:
1. Will this setup work well?
2. Is the MRV-F340 overkill for the Perfect 6.1? I don't want to blow my speakers... Should I get something with less power?

Don't worry about blowing your speakers because of too much power, the only way to blow a speaker is distortion. If you don't have distortion, you will be fine. I have an Alpine in my truck ... it's not bad; however, I chose a Pheonix Gold Amp for the S. I went with a 400.4 ... bridged the two rear channels for the sub. I don't have rear speakers and really don't think I'll get them, so this amp is perfect for me. the 400.4 puts out about 75 - 100 watts to the fronts and about 250 to the sub.

Jasom is right on the money with the power issue. The real issue is where are you going to mount the amps. If they are not fan cooled, placing them next to the spare may cause them to over heat. However if you put them in the trunk or on the trunk lid (would look very cool if done correctly, and would be out of the way of your trunk) you should be fine. NO such thng as to much power, isn't that why we drive S's?

One other thing, You may want to consider (1) 3 channel amp or a 4 channel amp that has good power and can be bridged for your sub, and of course a Xocer would be nice. Make sure you run good power wire from the battery. I used 4 gauge and I am using 1 amp

It is generally true that more power is better than less power for speakers, however, you can damage your speakers with too much power. As you push more power into the speaker, the voice coil will move further out. If you push too much power into it, the voice coil could be pushed outside the magnetic field of the speaker. Your amplifier then loses control of the speaker mometarily and when the voice coil come back down the it could be damaged during the travel downward.
You also will exceed the Xmax parameter (maximum amount of cone excursion) sooner or later. You can tell this is happening when your speakers start making a popping sound.
Looking at the equipment you have listed, I think that sub amp is a little under powered. It will still work just never run any amplifier at 100%.
