Jax native here. I agree with above as Crazy Sushi is very good. If you're headed to Riverside, Sushi Cafe is really good as well and there's 5 points nearby for some after dinner strolling.
In my opinion, any man can take a girl out for dinner. It takes someone special to plan out an evening and in the end, she'll thank you for that. I'll let you decide how.

The date didn't happen, I met someone else this weekend. For you older guys, she does fitness shows, meaning she is the one up there showing off her well-defined bod. 
She's a great girl too, very fun.
