Goal is to finish all of my bushings and make it to Sebring in April.

Will they make me do HPDE1 if I haven't been there for 3-4 years? I wouldn't mind having an S2000 instructor if so.

if you have never run with NASA and request anything other than DE1 they will ask for your experience. Kinda up to you where you think you should be. DE1 and DE2 share the track just DE1 has an instructor. Pace for DE1/2 is typically like 2:40-4:00 with most people around a 3 min a lap pace I'd say.

Whats your experience like? How many events have you done? What organizations and how long ago?

Autocross for 3 seasons. After that about 4 HPDE a year. Did Sebring back in 2014 but haven't been since. Have done a lot of track days at the Firm since they're open every weekend and I don't need to plan ahead.

I would say I'm between an intermediate driver in terms of speed.

I'm signed up for Sebring. Trying to have the car finally up and running by the end of this week.
