Just trial and error with this camera. This is what I use for the video I do.
A baseline for the Hero2:
Night video ( those settings have less of the star effect when recording with the any lights on)
720 - 60 fps
FOV 720p wide
Day video (drawback uses up the sd card more but the picture quality is great) (Long time to upload to youtube etc)
1080 - 30 fps
FOV 1080p wide or narrow (depends on the video i am shooting)
Center dot on all video shooting
I like the 1 button on for all my video just for piece of mind knowing that it is on
I also like the light blinking showing me that the camera is on
Hope this helps everyone with their Hero2.

I use 1080 and wide angle on mine
just found this site that has polarizing lenses for the housing (less glare from the sun the better) gonna try this out when I get it.

1080p is nice and all if you want to watch it on your tv at home, but for the web 720 is all you need. also it helps keep the file size a little bit smaller
