Sorry to say it but you will be done for no insurance, you need to produce all other documents as per the producer. If you fail to produce charges will be brought for failing to produce also. These however are normally dropped upon production of documents at court.
You do have mitigation, this will not get you off but should serve to reduce the penalty imposed by the court.

I had it removed from my S2000 policy first time around as it saved me money. I have a friend that had it exempted from his policy without explanation from the insurer.

It's usually an under "25 years old" clause to stop young kids insuring a Nova and driving dad's Aston.
I've always confirmed that it's been on my policy's for the few times a year I need to borrow a car with 4 doors.
TBH If you turn up with your licence, the MOT and both yours and your mates insurance I doubt they'll check the fine print.

you can allways print out a fake covernote, but if you get busted they will do you for fraud
does the producer have check or it or check and record?
also try and find someone with a cover all policy, my mate has his own company and their policy says anyone can drive any car at any time if instructed to do so by anyone named on the policy

Would be worth checking in future though...

The insurance companies are cutting back on this, and often without telling you they are removing it
It's been abused too much apparently.
Doesn't help you now, but lots of people are caught out like this
