This is a difficult question because different cars can bring different forms of fun to driving. My C6 is infinitely more powerful than the S2000 and as such offers power related fun that the S2000 cannot match. However, the S2000 offers tossability that is unmatched in any car I have driven (I am sure the Elise probably beats it).
At the end of the day, hopefully the car you are driving is the one offering you the most fun.

Here's my list:
Elise, more hardcore than the S2k
Conti GT, although I drove a pre-production car, it's still impressive that it doesn't feel like a very heavy car. Driving 150+mph is almost too easy. Impressive acceleration at high speeds.
F430, great soundtrack, only the new V8 Vantage comes close in sound. Everywhere you drive people go
DB9, more hardcore than the Conti GT and also noisier, but what a noise it is.

I know what you mean, but my old mercedes was just as fast as your vette, but at no point did I think it was as fun as my S was. Sure, it was cool to get pushed back into my seat, but seeing as it takes no skill to execute, straight line speed gets old really quick (to me at least)
