Excursions are pretty sweet; I'd look for one of those. And if you think they're too big and/or old then I highly recommend (as others have mentioned) the Dodge Durango. I really enjoyed driving one when I had one as a rental in Montana a few years ago. Very solid platform, which also means the Grand Cherokee might be something to look at as well.
As to towing the S2k to track events, are you planning to make some modifications to the car that will make it unpleasant to drive long distances? Are you just trying to keep it's mileage down? Or do you just want to bring another set of wheels/tires to use at the track?

Yeah I was half way kicking around the idea of a Grand Cherokee, but for the money the Touareg TDI looks like a solid bet at nearly the same price point. Oh the gas mileage It's essentially a Porsche Cayenne isn't it?

Ive heard nothing but great things regarding the Touareg TDI-
Currently have a Ridgeline.
If I ever upgrade my boat (i/e bigger than a Mastercraft X1), the Touareg would be the first place I would look-
